What are Rissois??? Lets see, Rissois are kind of like an Empanada, but not...lol!!!! Rissois are half moon shaped dough filled with all kinds of meats, vetables or even seafood. After you have the half moons filled, you dipped them in milk and then seasoned breadcrumbs. But the cherry on top of this already delicious snack, it's FRIED!!!
First you make the dough...
And the filling, today we made an assortment of meat fillings...
Roll it out, and place a spoon full of filling in 2 inch intervals and about 3 inches from the edge of the dough...
Fold the dough over the filling and with your hand shape a half moon around each spoon full of filling...
With a round cookie cutter cut the half moon (if you don't have a cookie cutter you can use the rim of glass, works perfectly)...
Finally, dip each half moon in milk first then in seasoned breadcrumbs. At this point you have the option of frying them right away or freezing them. We went with the freezing option, since made a total of 230 Rissois.
When you are ready to fry them, removed however many you want 1 hour or 2 ahead of time so they can defrost. If you put them in the frying pan straight from the freezer the filling won't heat through...
